We discovered a true gem!

We found this salt almost by accident and honestly, we had never heard of it before.

​

Once we understood what it was, we realised we had found a real treasure hidden in the Andalusian hills.

​

This is spring salt, coming from a rare ancient inland mineral spring, one of the few of its kind still active today.  

​

Its story begins with rainfall in the hills, slowly filtering through layers of earth for decades or even centuries.  

 

This is not yesterday's rain ;-).

​

Eventually, the water reaches something extraordinary:  the buried beds of an ancient sea that once covered this region millions of years ago.

​

When that sea dried up, its salt was left behind and later buried beneath earth and stone, forming the mineral layers still hidden there today.  

​

Untouched by the modern world and long before plastics, industry or pollution existed.

​

As the filtered rainwater dissolves these ancient salt deposits, it becomes mineral rich brine.

​

Natural pressure then guides it back toward the surface, where it emerges as a rare inland saline spring. 

​

From there, it flows into shallow ponds where sun and wind slowly create pure, clean spring salt crystals.

​​

This salt carries a double purity:

​

•  the rainwater has been naturally filtered during its long underground journey and,

​

• the salt itself comes from an ancient sea that existed millions of years before modern pollution.

​

The result is a soft, clean mineral salt and it makes a perfect match for our early harvest olive oil.
